The best way for you to complete the required phone and sim you need is to purchase a phone in the states. Ensure that the phone is unlocked to all networks to ensure it could be used in Poland. Poland has stricter rules in purchasing a sim card and requires you to register the sim card once you purchase it. So the best way for you to do this is to purchase one locally once you land in Poland. You may check with the sim provider what type of plan would work based on your need but take note that prepaid plans expire shorter than your needed 1 year service. Hope this helps!
